Restaurant Is A Family Recipe
Henry and Raul Castillo do everything together. They live together. A year ago, they got gastric-bypass surgery together. Now they have opened Castillo's Cafe and Catering, 2001 N. Armenia Ave., taking their mother's recipes and cooking them for the masses. "We're just a small business," Raul Castillo said. "It's a small, little place. Daily specials, Cuban sandwiches, steak sandwiches. They're all Spanish recipes my mom gave me." Raul handles the cooking; Henry does the books. They had never worked in the restaurant business, although Henry is an accountant for restaurants, Raul said. "He has more knowledge, but I'm the cooker," he said. He said he has cooked for friends and family for years.

The conscientious consumer (which we like to think of as an ideal and not an oxymoron) can find herself beset by angst each time she steps out the door. Is this bauble/tchotchke/food item fair trade/local/sustainable? Or was it made by underfed 9-year-olds out of rare tropical hardwood and then safety-tested on unsuspecting bunnies? Heightened national awareness of climate change—which, don't get us wrong, is a very good thing—has dramatically complicated this calculus, introducing factors like shipping miles and carbon footprints. Ditto the rash of lead-related toy recalls. It's enough to drive a neurotic do-gooder into Scrooge-like, housebound, unholidayesque isolation for the duration of the season.Just in time for the biggest shopping day of the year, we're here to remind you to (a) breathe in; (b) breathe out; (c) consider that diving under the covers for the next month is not necessary.

Price of Friday Night Football
The roar of the crowd is all they hear because it's game day and the last thing players are concerned about is life long injuries. Every Friday night in the fall somewhere in Texas high school athletes are playing football but what price do those young athletes pay for Friday night fame? Benjamin Rambo, says an injury ended his high school football career, "I hurt during the off season and I didn't take care of it I didn't go get it checked out like I should have and it turned into a lot worse that it should have been." Mr. Rambo was sidelined when he had major back surgery for a herniated disk. So how safe is high school football? According to the American Journal of Sports Medicine, four out of every 1,000 high school football exposures resulted in an injury.

The Daily News' four dieters are pumped to start their year of exercise
If there is a truism about weight loss, it is this: You must burn more calories than you consume. Most people can't do that if they don't exercise. The four women in the Daily News Great Weight Loss Challenge understand this, and they were pumped for their first training session with 92nd Street Y fitness director Mirabai Holland. "We want you exercising a few times a week - it will help you stay on track with food intake," Holland told the women, who are participating in the yearlong weight-loss effort sponsored by The News. "As you develop more lean muscle mass, it will boost your metabolism, so you'll be burning [more] calories even when you're done." In meetings last month, Holland assessed each woman's fitness interests and needs, then recommended workout plans they could follow in their neighborhoods, at the gym and on her Web site, www.movingfree.com.
